Boasting six nights of the best Chinese gastronomy, Chinese chef Jacky Chen from Banyan Tree Yangshuo in China flew all the way here to showcase his much-celebrated skills and cutting-edge culinary flair at Bai Yun Chinese restaurant, Banyan Tree Bangkok on June 16-21.
An impressively expansive menu highlights his 6-course set menu, featuring authentic Chinese cooking combined with his creative talent and elaborate techniques, which starts with the Marinated Bean Curd Filling with Fruit Salad. Cooked to perfection, the delicate bean curd is filled with stir-fried mixed vegetables of Chinese chives, carrots, mushrooms, and asparagus and is accompanied by mixed berry sauce for a sweet note.
The next to be up is the Double Boiled Chicken Soup with Sea Snails and Wild Mushroom. A clear soup is packed with authentic Chinese ingredients like chicken, sea snails, mushrooms, goji berries, and bok choy, providing excellent nutrition with extraordinary flavors.
The culinary pleasure with chef Jacky Chen goes on with the Braised Pork, Red Sauce, consisting of lusciously tender pieces of braised pork glazed in sweet and savory red sauce with a parade of broccoli, olive, and baby eggplants, adding an extra dimension of flavor to the dish. The Braised Grouper in Rich Beer Sauce, which arrives next, features tempting fillets of braised grouper with rich, savory beer-infused sauce in an edible bowl of boiled tomato atop a crispy pastry sheet, a luxuriously textured dish with unexpected flavor combos.
Adding more fiber to the menu, the Wok Fried Local Garden Greens gets the taste buds exuberantly joyful with a vivid display of meticulously fried vegetables, including carrot, okra, white asparagus, and green asparagus, each of which having its own characteristics with unique palates. The dish is befitting complemented by the Fried Rice with Dry Scallops, a Hong Kong style fried rice with shrimp, scallop, and Hong Kong kale, drizzled with crusty flakes of dried scallop—an absolute toothsome delight.
Chef Chen’s spectacular ends with a decadent dessert adapted from ancient recipe. In the Royal Court Almond Milk with Egg White Flake, almond, milk, egg white, and honey form a silky, smooth cream with heavenly scents and colors. It is served alongside almonds and a tiny wedge of apple pie, which are enjoyable.
