Elements welcomes the start of the game season in Europe with an enticing menu of traditional dishes featuring venison, rabbit, guinea fowl and quail, each prepared with a touch of Japanese influence.
Game includes some of the most intense, and rich meats available. In the hands of our skilled chefs at Elements, it is elevated to new heights of culinary sophistication and flavour.
The unique dining experience will include French quail with caramelized shitake, cranberries, soba grains, Burgundy rabbit confit with grilled turnips, mustard sauce and sansho pepper, and Challans guinea fowl braised with lardons, savoy cabbage and du Puy lentils. Other highlights on the autumn menu will include succulent venison loin and beef ocha with smoked eringi mushrooms and root vegetables, and braised boar and roast tenderloin with soy beans, daikon, apple puree, and a raspberry vinegar jus.
