Last month, Gianni Ristorante, in collaboration with G Four Fine Wine & Spirits presented an exclusive wine dinner experience with a special arrival of a Michelin Star Chef Raffaele Ros from San Martino Ristorante in Scorze, Venice who brought with him the authentic cuisine of Veneto.
San Martino Ristorante was established by Chef Raffaele Ros and Michela Berto since 1978. With Chef Raffaele’s culinary expertise and Michela’s wine excellence, San Martino has become very successful and won its first Michelin Star in 2014.
On June 28, Great Gastro was invited by G Four to be a part of this wonderful experience with a specially created 6-course menu with pairing wines from G Four. The menu includes:
The thick sweet cream made with carrot offers a refreshing aroma with a touch of almond and parmesan cheese. It is a fresh and light starter to whet your appetite.
Cornucopia Filled with Mousse of Salt Cod, Olive, Celery & Young Leafs

The Italian style crispy pastry cornucopia is delightfully filled with bright and airy mousse made with salted cod, served with the olive puree, celery, fennel and young leafs, exhibiting various flavors and textures, that goes very well with the selected pairing wine.

Fresh & Grappa Cured Grapes

The next menu is outstanding with a beautiful fragrance of crusted sardine carefully baked with the toast, accompanied by the mixed salad of marinated red onion and fresh and grappa cured grapes, together with blueberry-apple vinegar, adding a hint of sourness to the dish.
Spaghetti AOP with Raw Prawn Tails on a Smoked Aubergine Cream

Handmade by the chef’s remarkable culinary skills, this Spaghetti AOP is cooked to perfection, making its fine strands of pasta tender, yet firm to the bite. It is placed on smoked aubergine cream and elegantly crowned with raw prawn tails. Together, they form a delicate and aromatic medley.
Peppered Duck Breast, Cooked Must, Marinated Grapes & Celery Puree

The peppered duck breast is extremely tender with a crisp skin, offering succulent flavor and moisture. It is glazed in sweet cooked must and a little salt sprinkled. Marinated grapes and celery puree act as a tempting side dishes, adding an extra punch of flavor to the dish.
Citrus Fruits Soup, Honey Ice-Cream & Sanded Hazelnuts
The sweet treat at the end of the meal comes with a refreshing scoop of honey ice-cream on the tasty island of sanded hazelnuts. It is then surrounded by the citrus fruits soup with zesty pieces of citrus delights.
