Behind the Kitchen Door
The kitchen is run by the hotel’s executive chef Nicolas Schneller, a French native whose passion is to enhance guest dining experience with his new innovative creations. He began his career learning and training from top hotels and restaurants in Europe, and worked as both a pastry chef and an executive chef at many restaurants before joining Anantara Siam Bangkok Hotel.
Let the Feast Begin
Upon entering, guests are welcomed joyously with a dazzling mimosa station and Sangria bar where refreshments are served as an aperitif.
Step further inside displays the Thai delicacies from the Spice Market restaurant featuring kaow soy gai, Northern style egg noodle curry with chicken; charcoal grilled skewers like chicken satay, grilled pork, pork and beef ball, and Isaan sausage; mieng kham, a traditional Thai appetizer; kaow krieb pak mor, Thai style dumpling; and som tam, papaya salad.
Next up is the Indian station which highlights the naan bread freshly-made in tandoor oven served with tandoori chicken, along with Indian favorites like pav bhaji and chaat.
Chinese palates will be attracted to the mouthwatering Peking duck, char siu barbecued pork, and Szechuan style soup, as well as the Chinese steamed buns and assorted dim sum on offer.
In the middle of the area lies the live cooking station serving up limitless foie gras dishes from Rougié Sarlat which include pan-seared foie gras, foie gras sausage, foie gras terrine port wine jelly, and foie gras custard.

This ready-made poultry is crispy on the outside, tender and juicy on the inside, and full of flavor. For diners looking for Middle Eastern cuisine, there are surprisingly a great selection of tempting dishes like tabbouleh, baba ganoush, hummus, falafel, quesadilla, and a whole lot more.
For beverages, go for the hotel’s signature welcome drink, Princess of Siam, a refreshing blend of Jasmine water, rose syrup, and lemon or Aqua’s signature cocktails like 155 & Tonic and Kiss from a Rose. Classic cocktails like Martini, Bloody Mary, and Cosmopolitan are also available.
The Italian Kitchen, located next to the bar, features a delectable choice of Italian fares from the hotel’s Italian restaurant, Biscotti. The menu is loaded with pasta dishes like spaghetti, casareccia, and risotto, made à la minute with great options of sauces, and toppings. The other highlight is the Burrata cheese from cow’s milk served with sundried tomato, basil pesto, and extra virgin olive oil.
Behind the Madison’s door reveals deli meat choices, from salami to prosciutto and pancetta, plus, a generous assortment of bread, artisanal cheeses, and pickles. The salad bar nearby showcases a wonderful display of fresh greens, cold appetizers, ready-mix salads, and various types of salad dressing.
Seafood enthusiast will take pleasure in the abundant seafood items on ice, including Fin de Claire oysters, tiger prawns, mussels, sea crabs, snow crab legs, Boston lobster, and sea scallops.
