Scallop carpaccio served with sea urchins, lemon cream and wasabi-scented cabbage purée

Heart of cod served with sea snails, wild mushrooms and pea hummus
Roasted Maine lobster with a smoked pepper and cuttlefish medley, snow peas and Chorizo foam
Pan-seared Quercy lamb saddle, purple potato purée with a hint of hazelnut, baby leeks and coconut lamb jus
