Let’s eat, drink and have fun at Niche
Niche at Siam Kempinski Hotel Bangkok is introducing its new Asian and Non-Asian dishes, created by the hotel’s Executive Chef James Norman and his culinary team, that allow diners to select their favorite ingredient and decide upon as Asian or Non-Asian interpretation.
Wagyu Beef Sashimi
Asian: The raw wagyu beef is cured with soy and sesame, making it tender and briny. It is accompanied by taro chips to add a desired crunch and texture and smoked mango gel for pleasant tartness.
Non-Asian: The marvelously marbled wagyu beef comes with a large swath of fat, making it very juicy and luscious, served with toast, pickled mushrooms, truffle egg yolk, and roasted hazelnuts to satisfy the European palate.
Hamachi
Asian: The Hamachi fillet is coated with seaweed crust to add an ocean vibe to the dish, topped with preserved grilled scallions and deep-fried beetroot for a contrasting texture, and served with sweet and savory yuzu miso.
Non-Asian: Retaining its firm and succulent texture, the Hamachi fillet goes unexpectedly well with the nutty beetroot remoulade and the creamy, decadent tarragon yogurt. It is then sprinkled with roasted grains for a touch of crispiness.
Wagyu Medallion
Asian: The wagyu medallion is mystically tender with a rich beefy flavor. It sits beautifully atop the tempting papaya and mango salad mingled with syrupy galangal teriyaki sauce, offering a harmony of sweet, salty, spicy, and sour flavors.
Non-Asian: The delightful Italian Tagliata comes with a succulently tender piece of rare wagyu medallion with delicate parmesan cheese and aromatic arugula leaves, together with balsamic vinegar and black pepper which brings fresh flavor and lively aroma.
New Zealand Lamb
Asian: The boneless rendang spiced lamb rack has remarkably complex flavors with an Indonesian touch, accompanied by the layers of spices from the deep-fried kromeski wrapped in lamb, chili, and spices and served with kaffir lime jus.
Non-Asian: The rosemary baked cutlets are elegantly placed on the confit lamb shoulder, both are excellent in scent and taste with an intense buttery mouthfeel, served on a bed of garlicky chimichurri sauce and topped with cherry tomatoes.
Pavlova
Asian: The all-time favorite pavlova lends a nice Asian touch to the dish with a meringue—crisp but somewhat chewy on the inside—topped with lychee, ginger, and dried coconut and accompanied by passion fruit sauce for a zesty tropical twist.
Non-Asian: This meringue-based dessert is meltingly sweet with a slight crisp crust on the outside. It features fresh strawberries and blueberries, as well as a topping of lemon curd, citrus fruit, cream and fabulous berry sauce.
Apart from the Asian and Non-Asian dishes, the restaurant’s mixologist team has also created a new cocktail menu that perfectly pairs with Chef James’s beautiful dishes ensure satisfaction and overall dining experience to even the most discerning diners.
Niche Negroni
Served as an aperitif to stimulate the appetite, the Niche Negroni combines Beefeater 24 gin, Antica Formula, and Campari with grapefruit bitter and blood orange liquor, to create a smooth take on the classic cocktail.
Al Fresco Gin Tonic
Astonishingly simple, but amazingly refreshing on a hot day, the Al Fresco Gin Tonic comes with fresh cucumber, black pepper, and rosemary bathed in a well-mix of Beefeater Gin infused with cucumber and tonic water.
The Niche Old Fashioned
The Niche Old Fashioned offers a more exciting take on traditions with an excellent foundation of Chivas Extra whiskey, apricot liquor, angostura bitter, peach bitters, soda water, and bitter orange marmalade for a tangy essence of citrus.
Italian Love Story
In the Italian Love Story, bourbon whiskey, Chambord liqueur, rosemary, mixed berries, lime, and ginger ale forms a tempting strong drink with a deceivingly sweet taste. It is then garnished with blueberries to brighten the glass.
Tiramisu Martini
Caffeinated cocktail for those who put coffee first, the Tiramisu Martini elaborates on a classic martini with an earthy concoction of Absolut vanilla vodka, chocolate, espresso, amaretto, and milk, with Italian coffee beans as an adornment.
