30 g of Russian Oscietra Caviar with Classic Condiments and a Shot of Beluga Noble Vodka
The first course comes with one of the world’s most expensive caviars, Russian Oscietra Caviar. These 30 grams of glistening brown pearls are served with classic condiments like traditional Russian pancakes, egg white, yolk, red shallots, chives, lemon, and creme fraiche. You can have the caviars the way you want whether having them with condiments, eating them alone, or drinking a shot of Beluga Noble Vodka afterwards.
French Erquy Scallop served in its Shell, Mushroom and Leek Sabayon, Bone Marrow, White Alba Truffle
Hokkaido Scallop Carpaccio on a Celeriac “Rémoulade”, White Alba Truffle
Carefully prepared in French style using the freshest ingredients from the seawaters, the French Erquy Scallop arrives with a huge piece of pan-seared scallop imported from France served atop mushroom cream sauce and topped with rich bone marrow and slices of white truffle. It is followed by the Hokkaido Scallop Carpaccio, in which a slice of mild, sweet scallop is neatly placed on a celeriac “rémoulade” and topped with luxurious white Alba truffles.
Pan-Fried Foie Gras, Gingerbread, Red Cabbage and Cranberries
Confit of Quail and Foie Gras Glazed with Madeira Sauce, Apricot Chutney
The next course presents two succulent dishes mainly made with one luxury ingredient—Foie Gras. The first dish is temptingly served with an aromatic piece of pan-fried foie gras accompanied by gingerbread, red cabbage and cranberries sauce which go savoringly well together. The other dish comes with confit quail meat stuffed in foie gras, glazed in mildly sweet Madeira sauce, and served apricot chutney. The combination is heavenly good that you would want to ask for more.
Brittany Blue Lobster, Veal Sweetbreads, Mushrooms and Martell X.O. “Feuilleté”
The fourth course features the Brittany Blue Lobster known for its sweet, subtle flavor and firm texture. The lobster meat together with asparagus and mushroom are packed in sweetbreads made from veal which is extraordinary tender. The dish is then garnished with Martell X.O. “Feuilleté” sauce for a hint of alcohol and a classic French flavor
Mumm Cordon Rouge Champagne Granité
Cleanse your palate with this refreshing granité made from the distinctively fresh Mumm Cordon Rouge Champagne.
Japanese Beef Fillet A4
Pan-Fried Turbot Périgord Black Winter Truffle and Porcini Parmentier
Here comes the main course which you can pick between beef or fish. We eventually decided to go with beef. The highly marbled Japanese beef fillet comes with a beautiful pattern of fat through red flesh, making it very luscious, juicy, and tender—so tender it melts in your mouth. The steak is beautifully paired with buttery-tasting mashed potato sprinkled with grated black truffle. It is the main dish that offers the original taste of excellent ingredients
Chestnut and Black Current Mousse served as a “Pavlova” Surprise
Those with a sweet tooth who still have some rooms to spare will enjoy this “Pavlova” Surprise. It comes with a surprise filling topped with chestnut and black current mousse. Adorned with colorful berry sauce and fresh berries, it is definitely a dessert with Christmas vibe!
