Throughout May the chefs at Up & Above Restaurant celebrate Thailand’s famous Rock and Phuket lobsters with a selection of delicious à la carte specialties prepared using local and international flavors. Rock and Phuket lobsters are renowned for their firm sweet-tasting meat. They can be enjoyed in a number of ways – poached, grilled, fried or steamed – eaten on their own with a splash of hot melted butter, or as the central ingredient of a more complex dish.
On the menu at Up & Above Restaurant this month are appetisers such as poached Phuket lobster salad with green mango and aromatic Thai herbs, and marinated rock lobster and avocado salad with mozzarella, rocket and citrus dressing. Both dishes are full of zesty flavour and make great preludes to main course offerings that include a Mediterranean-inspired dish of rock lobster poached in butter with parmesan risotto, basil and fresh asparagus, and a hearty half or whole grilled Phuket lobster with spicy Thai dipping sauce and yam som-o. Of course, no lobster menu would be complete without classic Lobster Thermidor. At Up & Above it is created with rich and creamy Phuket lobster accompanied by homemade fettuccini with fresh herbs and a light side salad.
