From 15th September onwards, diners at Scarlett Wine Bar & Restaurant can experience the thrill of the grill as chefs unveil an American-style artisanal grill for live-fire cooking and smoking with tamarind wood.
The new special grill allows Scarlett chefs to adjust the height of the cooking surface with the rise and fall of the flames spontaneously together with the channels that will capture the juices for basting and sauce preparation. At Scarlett, chefs will use the free-standing grill to smoke and cook premium quality meats such as dry-aged beef from our dry ager machine, T-bone steaks and ribs. A local tamarind wood is use for this special machine because of its slow burning heat and the scent of its fume, which enhances and creates sweet or strong flavours that guests will love.
A highlight from the grill will be the signature meat, a 150-day dry-aged Cote de Boeuf. Diners can also enjoy tender grilled butterflied chicken with thyme and lemon, flavourful grilled T-bone lamb with lamb jus, deliciously smoky tamarind wood grilled pork tomahawk steak, mouth-watering grilled and barbecued pork spare ribs and whole grilled sea bream with fennel and lemon.
