‘Beef Bourguignon’ is a Gallic staple originating from the Burgundy region of France. The stew is prepared with tender and well-marbled beef braised in red wine and beef broth, generally flavored with garlic, onions and a bouquet garni, with pearl onions and black truffle added towards the end of cooking. ‘Lamb Navarin’ is a French stew made from lamb or mutton. This menu is perfect for slow-cooking, where a less expensive cut of meat is cooked gently over a long period of time becoming meltingly tender and wonderfully full-flavored.
‘Veal Blanquette’ Blanquette is a French term for a ragout of white meat cooked in a white stock or water with aromatic flavorings. The sauce is obtained by making a roux and adding cream and egg yolks and topped with black truffles before serving.
‘Ossobuco’, is a Milanese specialty of cross-cut veal shanks braised with vegetables, white wine and broth. It is often garnished with gremolata and black truffle mushrooms and is a firm favorite throughout Italy.
