He started his career as a cook at a college in France.  At the age of 15, Joël Robuchon became an apprentice chef at the Relais of Poitiers hotel.  He was later officially elevated to full-time chef.  It provided him an opportunity to travel around the world, which inspired him to innovate his cooking style before he opened the first restaurant of his own called Jamin in Paris.
