Thailand is renowned for its cornucopia of delicious seafood. A favorite among seafood lovers is the large tiger prawn and throughout June the chefs at Up & Above Restaurant celebrate this giant of crustaceans with a Giant Tiger Prawn promotion featuring Thai and International preparations.
Prized for their succulent flesh and delicious whether grilled, barbecued, fried or steamed, Giant tiger prawns take center stage in à la carte appetizers such as tiger prawn salad with fennel, tomato, wasabi rocket and mango salsa, and chilled tiger prawn with green mango som tam and spicy aromatic dressing. Main course offerings include grilled marinated tiger prawns with cous cous, a spicy harissa chilli paste, and a fresh cooling side salad. Equally full of flavour is a delightful green curry with tiger prawns, eggplant, pineapple and coconut. In a culinary nod to Mediterranean seafood traditions, also available is tiger prawn saltimbocca, a wonderful dish of tiger prawns seasoned with sage, wrapped in prosciutto and served with creamy polenta, crunchy endive and a piquant orange butter sauce.
