This spacious trattoria welcomes guests with the stunning wine cellar and bar counter cosseting a variety of wine and spirit bottles, with a long wooden table where guests can sit and sample highballs and wine. Step up further inside lies a dining area defined by warm-colored floors, neutral wall colors, and intriguing flower ceiling sculptures, filled with modern art pieces and marvelous candle lights. Diners can choose to sit at the tables looking over the kitchen or at the more private tables separated by gleaming glass partitions.
The well-appointed, marbled open-kitchen, which takes center stage with its iconic wood-fired oven next to the antipasti table, allows diners a chance to appreciate professional chefs working on their authentic Italian dishes.
La Tavola & Wine Bar is led by the Spanish Chef Jose Martin Ruiz Borja, the hotel’s executive chef whose past experiences include working as an executive chef at many top restaurants in Spain, Algeria, Dubai, Kuwait and Mumbai. Specializing in various international cuisines, chef Jose is bringing the diverse flavors of Italy with his passion and dedication to the restaurant.
Last December, Guest Chef Luca Pecorari, Chef de Cuisine at Limoni Italian restaurant in Guangzhou who has over 32 years of culinary experience from 12 different countries around the world, joined hands with Chef Jose to create a new menu featuring the luscious savor of traditional Italian and Mediterranean cuisine to the establishment.
Authentic and Uncomplicated Italian Dishes
The extravagant meal at La Tavola & Wine Bar kicks off with a complimentary dish of authentic Italian Parmigiano-Reggiano served with condiments like black olives, sundried tomatoes, and spicy tomato dip to stimulate the appetite and pamper diners before the real deal begins.
The first dish arrives with the Crema di funghi, an Italian soup of onion-fried shitake mushroom and button mushroom, along with Parmesan foam and croutons, soaked in a velvety broth of chicken stock, shimeji mushroom, and truffle oil, exhibiting an earthy flavor with a smooth, creamy mouthfeel.
A recent addition to the menu is the Focaccia “La Tavola”. This hand-kneaded dough is filled with a mixture of creamy fresh Mascarpone cheese, dry-cured Parma ham, and luxurious black truffle, adding distinctive and enticing scents to the nice crispy focaccia crust.
Sharing Is Caring
For more dramatic dish, the Spaghetti all’Astice for two (or more), garnished with the lobster head to make it a treat for the eyes, is refined with an impressive combo of perfectly al dente spaghetti and divinely sweet Boston lobster, cooked with garlic, olive oil, and brandy, in fresh tomato sauce. It’s surprisingly delicate and balanced.
For Heartier Mains
Among entrees, the beautiful Merluzzo del Baltico is done to perfection with pan-fried snow fish fillet with crispy skin, floated gently in creamy asparagus fondant with mellow black garlic sauce and pleasantly salty salmon roe to add wow factors to this vibrant seafood dish,
followed by the luscious Guancetta di bue brasata, displaying an extraordinary tender slow-cooked beef cheeks braised in red wine and a huge, firm piece of pan-seared Hokkaido scallop, drizzled with savory beef jus, on traditionally made creamy Parmesan risotto from Acquerello rice.
A Modern Twist for A Classic Sweet
Lending a modern twist to an Italian traditional dessert, here, the classic Panna Cotta is beautifully covered with a dome of sugar, in which a raspberry sauce is poured over to melt the dome away and reveal a pile of treats within it. The low-fat yogurt sitting neatly on chocolate crumble tastes brilliant with the sweet and sour red berries and raspberry sauce.
