Rossini’s award-winning Italian restaurant at Sheraton Grande Sukhumvit, a Luxury Collection Hotel, Bangkok is thrilled to welcome back Chef Andrea Cannalire, the creative force behind 1 Michelin star Ristorante Cielo in Ostuni. The exceptional restaurant is renowned for respecting Italy’s rich culinary heritage while also guiding adventurous diners into unexplored terrain.

From January 24 – 28, Chef Andrea will collaborate with Rossini’s own Executive Chef Gaetano Palumbo to create a special “Four Hands” menu.

Dynamic and talented, Chef Andrea was classically trained by outstanding Italian chefs at Michelin-starred restaurants including Villa D’ Amelia and La Strega. As Chef de Partie, he went on to hone his skills at one and two Michelin starred restaurants around Italy, among them Parizzi, Bracali, and Al Pont de Ferr. Chef Andrea respects his Italian roots and heritage but also embraces an inventive approach, delighting diners with playful and experimental dishes.

Chef Andrea’s culinary collaboration with Executive Chef Gaetano is a union of two masters of their art. Born in Sicily, Chef Gaetano grew up in Sciacca, a traditional fishing town in Agrigento Province, an area hailed as the culinary heart of traditional Sicilian cuisine.

Highlights in the gifted chef’s extraordinary career include working as a consultant chef to Michelin starred Chef Alfredo Russo during the opening of Café Turino in Mexico City. He has worked alongside three Michelin starred Chef Fulvio Angelini at La Zagara restaurant in Sicily, and has received qualifications as a Master Italian Chef from the Accademia Barilla. Chef Gaetano is also a certified sommelier.

At Rossini’s, lovers of modern Italian cuisine are invited to experience the “Four Hands” menu created by two extraordinary chefs. A choice of three, four and five course menus with or without wine will be available from January 24-28 in the newly refurbished restaurant.

The 5-course menu with Italian wine pairings will include an appetizer of yellowtail carpaccio, melon, cauliflower and lemon served with Follador Gold Prosecco, Veneto, and Puglia-style seafood soup complemented by Conti Zecca Donna Marzia Rosato, Puglia 2016. The perfectly balanced menu will also include spaghettone cavalieri with anchovy essence and baby squid accompanied by Tenuta Potenti Fiano, Puglia 2015. Other notable choices will be garoupa fish with zucchini sauce, chicken stock and popcorn, and bread wrapped Australian lamb chop with goat’s cheese and beetroot.
