Rossini’s is helmed by executive chef Gaetano Palumbo, born and raised in Sicily, who grew up with a passion for local cuisine and produce. With his years of culinary experiences, he infuses his own cooking style with modern techniques and enchanting skills to create contemporary Italian dishes with a Sicilian touch.
Before the meal starts, a complimentary loaf of bread with four distinctive flavors: pesto, black olive, garlic, and tomato is served with tomato salsa, mashed eggplant, and olive oil as a treat to awaken your appetite.
Culatelo di zibello, spugnole e asparagi blanchi
Considered one of the best Italian hams, the culatello ham is marinated with Champagne for 10 hours, making it lusciously sweet and salty. It is then accompanied by porched white asparagus and elusive morel mushroom for a deliciously earthy taste and scent and served together with a light gravy made from beef jus.
Salmone marinata e affumicata, parmigaino, cipolline agrodolce, sabbia di cipolla
This rosemary smoked salmon offers a unique aroma and flavor with appetizing notes of liquid nitrogen-frozen parmesan cream, delicate onion powder made with dehydrated onion, and sweet pickled baby onions. It is presented in a glass dome filled with billowing rosemary smoke for a sublime olfactory experience.
Ravioli di baccola’, ciliegino pachino e olive taggiasche
The ravioli di baccola is cooked to perfection with a filling of intricate bacalao made with dried and salted cod mixed with milk cream and onion. The ravioli is then fried with light, zesty tomato sauce, cherry tomatoes, black olive, and Sicilian spices, which turns out so enticing that has you mopping it up with a piece of bread.
Risotto, piselli dolci e guancia brasata
When plump grains of Carnaroli rice meets creamy green pea puree, you get the deliciously smooth risotto dish. It arrives with meltingly tender braised beef cheek—sous vide for 36 hours—as well as cherry tomatoes and fresh green peas as an accompaniment before capping off with reducing beef stock for flavor enhancement.
Lombo d’agnello, fagioli cannellini e pancetta
The mouthwatering pan-seared lamb loin—sous vide cook with water at 63° Celsius—is very juicy and appetizing, served with a mixture of boiled cannellini beans and petite pieces of pancetta and topped with fresh beetroot glazed in white wine vinegar, imbuing the dish with nutty flavors and earthy aromas.
Controfiletto miyazaki wagyu, cipolle al balsamico
The highly marbled Miyazaki wagyu sirloin is exactly how a quality steak should taste: tender, juicy, and beefy. Its natural juices and flavors marries well with the subtle, sweet taste of balsamic-braised banana shallot and the smokiness of baked garlic, with a sprinkle sea salt to intensify the flavor of the dish.
Stylishly served on a silver container, this well-presented hazelnut soufflé with a dusting of powdered sugar is crispy on the outside and fluffy on the inside. Upon serving, the gianduja sauce made with sweet chocolate and hazelnut paste is poured over the soufflé adding a more intense chocolate taste and sweetness.
Chocolate mousse, coffee granite
This devilish enticing dessert combines the earthy undertones of Italian espresso granite with the light, sweet chocolate mousse and the crunchy cookie crumbs to form a cool summer treat, with an elegant garnish of chocolate, raspberries, and grains, as well as a delightful berry sauce for a dainty touch of fruitiness.
