Hilton Sukhumvit Bangkok’s award-winning Scalini Restaurant today launches ‘Cucina Siciliana’ that showcases famous dishes from the Mediterranean island of Sicily. This is the first in a series of four special presentations in 2018 that feature popular regional Italian dishes under the heading of ‘Quattro Regioni’ (Four Regions).
Scalini Executive Chef Roberto Pinna is keen to share some of the secrets of regional Italian cuisine with local and international clientele at Scalini. Roberto’s culinary presentations begin this month (January) with new à la carte dishes from Sicily. Roberto is sourcing fresh products sourced sustainably from the Mediterranean Sea for preparation and serving using traditional Sicilian methods and ingredients.
“We begin with Spigola e Gamberi di Mazzara, a seabass and Sicilian prawn carpaccio with a citrus dressing, and Polpo Arrosto, Caponata and Ceci – roasted Mediterranean octopus tentacles with a rocket pesto and couscous salad,” explains Roberto.
“I am also presenting two special main course dishes that highlight the best of Sicilian cuisine. The Spaghetti con le Sarde and Melanzane is a delicious rustichella spaghetti served with Sicilian sardines, eggplant and tomato sauce. The Orata al Cartoccio is a baked sea bream fillet with olives, capers sauce, black mussels and Manila clams,” he adds.
Other regions to be featured in this ‘Quattro Regioni’ (Four Regions) programme throughout 2018 are Piedmont and Veneto, Tuscany and Roberto Pinna’s home island of Sardinia.
‘Cucina Siciliana’ runs until 31 March 2018 as exciting additions to the Scalini à la carte dinner menu from 6 p.m. to 10.30 p.m. Reservations are recommended.
