In June, Scarlett Wine Bar & Restaurant welcomes special guest, Chef Javier Ballesta from Spain. The talented chef will delight diners at the chic rooftop venue by giving traditional Spanish tapas a makeover, preparing and presenting his enticing light bites with contemporary creativity.
Chef Javier has an impressive culinary pedigree and has worked alongside three Michelin starred Chef Pedro Subijana who is renowned as one of the leading chefs in Spain’s Basque region.
Throughout June at Scarlett, Chef Javier will create a brand-new tapas menu and offer a special selection of hot and cold tapas. Highlights from the hot tapas will include lamb meatballs in a rich brandy sauce, Spanish–style garlic shrimp (gambas al ajillo), croquettes made using Spanish Iberico ham and Andalusian–style boquerones (anchovies) fried whitebait and bombas de la Barceloneta, a delicious combination of potatoes, meat and sauce that are served in many bars in the Ciutat Vella district of Barcelona. Also don’t miss the chorizo in wine with baby potatoes, the delicious signature dish of Spain’s Galicia region, pulpo a la Gallega octopus and more. For cold tapas lovers, the menu includes roasted capsicum salad with cod, marinated sardines and ajoblanco with marinated salmon, a popular Spanish cold soup from Granada and Málaga made with bread, crushed almonds, garlic, olive oil and salt and many other authentic Spanish tapas dishes.
