A simmered dish of salmon with sake lees, turnip, carrot, and shiitake mushroom and tempura of shrimp, snow crab, pond smelt, elingi mushroom, sweet potato and green pepper precede a noodle course of hot vermicelli with oyster, shimeji mushroom, honewort and a hint of yuzu.
