The St. Regis Bangkok has a singularly rare treat for discerning diners, from 17th November until 30th December 2017, at Jojo Italian Restaurant, on level 1 of the hotel, available at lunch and dinner. All month long, Chef Stefano Merlo combines the unique flavour of the delectable Alba white truffle into his innovative Italian creations at Jojo.
For a veritable Italian dining pleasure, this elusive white truffle is one of the most sought-after morsels. Found in Alba, in the Piedmontese hills of northern Italy, chef showcases the Alba truffle in an explorative four-course degustation menu, together with à-la-carte options, in addition to Jojo’s creative daily menu.
The four-course degustation menu is priced at THB 5,850++ per person, while à-la-carte options start from THB 680++ per dish, and additional white truffle can be requested for any dish at THB 380++ per gram.
The special truffle menu includes risotto, pasta, wagyu strip loin and beef tenderloin, as well as a truffle-laden dessert. Guests can delight in the likes of beef tenderloin tartare with white truffle and a mayonnaise truffle sauce, or carnaroli rice with taleggio cheese espuma and white truffle. The golden onion and 63°C slow poached egg are served with 36-month-aged parmesan cheese fondue.
Chef Stefano has given generous amounts of truffle to each dish: antipasti contain 3g of white truffle; the pasta, risotto and Wagyu beef tagliata have 5g each; while a delectable 2g of Alba truffle is added to the creamy white truffle ice cream.
