From 20 – 24 March 2018, experience the Michelin-starred Southern French cuisine of young upstart Chef Ludovic Turac at The Reflexions, modern French restaurant – recent recipient of a Michelin Plate itself, The Atheenee Hotel, a Luxury Collection Hotel, Bangkok.

Ludovic usually cooks at Une Table Aud Sud restaurant in Marseille where he was one of the youngest chefs ever to win a Michelin Star. His culinary philosophy is “change everything so that nothing changes”.

On 1 January 2013, the day Marseille became European Capital of Culture, Marseille native Ludovic and his wife Karine took the helm of Une Table au Sud. Ludovic, 27, learned his trade in the great Parisian restaurants Bristol and Guy Savoy, followed by Hotel du Castelet. Along the way, he won the coveted “Top Chef” award.

Today, Ludovic, together with Karine, the project’s sommelier and dining director, have made Une Table au Sud one of the most celebrated restaurants in France, including receiving the ultimate seal of approval of a Michelin Star in 2015, when Ludovic was the youngest recipient of the accolade.

“Every morning, I select the best fish that has been freshly caught at the Old Port, along with the freshest and tastiest vegetables that the good mother nature has provided, culled from Provence and the Southern Alps, not to mention the finest most tender meat,” explains Ludovic.

Meanwhile, following the same philosophy of celebrating nature, Karine pairs the cuisine with the most intriguing wines.

Now he presents his mouth-watering “The Think” 3 & 5-course set lunches and 7 & 9-course set dinners in person with optional wine pairings at The Reflexions. Exquisite and distinctive highlight flavors include: Meuniere sole fish “Blanquette style”, leeks and nutmeg; “Petit baba” in hibiscus infusion, citrus sherbet and black pepper cream;  Soft Boiled egg “mollet” style, celery cream, sea urchin concentrate jus; “Bouille-Abaisse” à La Marseillaise, Provence saffron, Ludovic style and Milk fed veal “fondant” ratatouille condiment, braised fennel and jus and many more.
