 Executive Sous Chef Carlo Valenziano at Brasserie Europa

He was born in a family that love cooking and learned to cook from his talented grandmother who really love to cook. He started to cook since he was 14 years old. In 2004, he has a great chance working as Chef de Partie at the Michelin Starr Il Luogo di Aimo e Nadia restaurant in Milan, Italy. Furthermore, he used to work as the Senior Sous Chef at Hostellerie du pas de l’ours – Relais & Chateau, 1 Michelin star restaurant in Switzerland in 2005; work as Consultant Chef at renowned restaurants in Italy, Ireland and Russia in 2008; and Sous Chef at the Uccello restaurant in Australia in 2009. And now, he comes to show his fabulous cooking skills at Siam Kempinski in 2015!

Chef Carlo Valenziano

Chef Carlo Valenziano’s cooking style is European homemade style using the finest ingredients and try to avoid neither using chemical food additives nor spending too long cooking time, because the ingredient’s nutritional value and its own flavor will be destroyed.

A sweet pan-seared foie gras served with an aromatic pineapple coffee jam, topped with salty sea salt from Maldon and Dutch pumpernickel granola. The foie gras is sweet and tender, dip a little bit pineapple coffee jam and enjoy the harmonious flavor of this menu.

“Porcini Mushroom Casserole”

Inspired by Slow food, using slow – poached free-range egg served with wild porcini mushroom and black truffle hollandaise. The taste is oily sweet and tender, as well as, there is an aromatic from the black truffle in hollandaise sauce.

“Cream of Pumpkin”

Cream of Pumkin served with milk bubbles and then topped with Pumkin seed. The taste is a little bit salty and there are some flavor from parsley, thyme and a tiny hint of spice.

Pan-fired Seabass fillet served with zucchini caviar and Latin quinoa and saffron fish reduction. The fish skin is crispy and tender inside blended with the salty saffron fish sauce.
