Chef’s creations include Quail egg & lobster salpicon in a puff pastry shell; Warm lobster claw served in a cold white gazpacho with spring vegetables and watercress salad; Lobster salad, exotic fruit Macédoine and sweet & sour mango dressing; Lobster served with morels, gnocchi, peas and green cardamom emulsion; Provençale-style lobster and pig’s trotter; and Sablé pastry served with citrus, lemon cream and mandarin sorbet.

The 4-course menu is available for lunch at B2,299 net per person including coffee and tea and the 6-course menu is available for lunch and dinner at B3,999 net per person including coffee and tea.
