Scarlett Wine Bar & Restaurant located on 37th floor at Pullman Bangkok Hotel G. This place known as one of the most popular restaurants in Silom area. When you walk into the restaurant you will see two-sided wine cellar coming with the selection of imported wines. Indoor restaurant decorated with many lights upon the tables, it’s very cool, creative and modern look. There are long tables, 4-seat tables, sofa corners and 12-seat private room, however, there is a great view wherever you sit. The prominent wine bar is located in the center of the restaurant with many interesting imported wine and cocktail selection.

Executive Chef Sylvian Royer of Pullman Bangkok Hotel G and Scarlett Wine Bar and Restaurant Bangkok
A French native, Sylvain worked in several Michelin star restaurants in France before entering the hospitality industry in 1993, where he will work for 4 and 5-star hotels in France, Luxembourg and Syria. His career within the Accor Groupbegins in 2000 as Executive Chef at Le Mercure Grand Hôtel Alfa, Luxemburg, followed by Sofitel Alger, Algeria, and Sofitel Thalassa Porticcio, Corsica.
Prior to his appointment at Pullman Bangkok Hotel G, Mr. Royer was the Executive Chef at the Landmark Bangkok, Thailand, supervising the 9 restaurants of the hotel. In 2007, Sylvain was appointed Executive Chef at the 5-star Pullman Bangkok King Power, Thailand, as part of the pre-opening team of the First Pullman of the Asia Pacific region. After one year, he was promoted to Executive Chef in charge of Food & Beverage as well as acting EAM. His knowledge of the brand also led him to join the rebranding team of the Pullman Pattaya Aisawan, Thailand, as Executive Chef in charge of Food & Beverage.
Now, Sylvain joins the Pullman Bangkok Hotel G team as Executive Chef where he continues to ensure that guests always enjoy a memorable dining experience!
Today, Where To Fin has a good occasion to savor the special selection of imported oysters in “Royal Oyster Promotion”. Scarlett will serve us a special harvest of oysters imported from a renowned oyster farm in France. The seasonal oyster promotion will include royal oysters, wild oysters and Fine de Claire oyster gathered from the famous Artouan marsh, south of Marennes in France, where oysters have been cultivated for five generations. It’s so interesting!
“Fine de Claire oyster”
A succulent Fine de Claire, a slender delicate bodied oyster loved by Parisians for its crisp, fruity flavor. Scarlett served us high-quality Fine de Claire oysters from France. You can feel the freshness, juicy and a little sweet-salty but harmonious from the raw oyster.
Scarlet used the wild oysters raised by tides on the Atlantic coast of France and collected in the ocean. Wild oysters have a little sweet and salty, the flavor of the wild oyster is stronger than Fine de Claire oyster. It’s suitable for people who love to eat the oyster that is not too much strong flavor.
You can discover freshly shucked royal oysters, a deep-cupped and highly prized oyster with a unique salty taste. They will be served as royal oyster #1-3, however, we already tried Royal oyster #1 and the smaller one – #2. The numbers depend on their size, but also have some different tastes. The royal oyster #1 is the biggest one, strong flavor; the royal oyster #2 is a little bit smaller than but stronger flavor. Who want to eat the strong flavor oyster, we recommend the royal oyster, try it!
“Warm Oyster with Champagne Sabayon”
The Royal oyster cooked with spinach then topped with Champagne Sabayon. The taste is sour and make you fresh, and also have a little bit salty from Champagne Sabayon blended with the sweet of royal oyster’s flavor.
The Royal oyster cooked with ham and olive oil, the flavorful ham is salty mixed with aromatic from olive oil and royal oyster flavor.
