Who is “Danilo Aiassa” ?

I am a native Italian, born and raised in Alba, a historical town in Piedmont in northern Italy which is renowned for its Alba white truffle and wine production, where my dedication and life-long passion for food and cooking began.

What inspired you to become a chef?

I have always wanted to be a chef since I was 6 years old. I spent most of my time in the kitchen with my grandmother, learning traditional Italian recipes from her and preparing food and ingredients with her. She always seemed to be happy and delighted when cooking which really did ignite my inner top chef and inspired me to make people happy through my food.

How did you join the culinary team at Mandarin Oriental Bangkok?

I have been in Thailand for 10 years now. I started my first job as a chef at Four Seasons Hotel Bangkok for 4 years before launching my own Italian restaurant called L’ulivo in 2011. Later, I decided to join the team of a Roman-style restaurant, Appia, together with my friends. And now, I have got an opportunity to work with this luxury hotel Mandarin Oriental Bangkok as a chef de cuisine who is in charge of creating authentic Italian flavors for Ciao Terrazza and other outlets of the hotel as well.

What best describes your cooking style?

I personally like to cook authentic Italian food. I fondly remember the tastes of my grandmother’s soothing dishes, and I think it would be great if people can try it. With its elegant simplicity, you really can’t resist it. However, as a chef I basically can do any kind of dishes from the modern Italian gastronomy to regional Italian cuisine, especially in Neapolitan cuisine.

What kind of food do you serve at Ciao Terrazza?

An extensive menu of Italian food at Ciao Terrazza is packed with traditional Italian dishes which are my areas of expertise as a chef. Only high-quality seasonal produce is used in my creations offering guests a real Italian dining experience like a true Italian.น

What is your favorite Italian dish?

My favorite Italian dish is none other than the homemade pasta, especially Ravioli which originated as a traditional food in Italian cuisine. Pizza is actually my favorite as well. Though it has taken on many different forms, I still prefer the authentic Italian pizza one.
